The Mustard Mill Einbeck produces mustard from regional raw materials in a procedure of grinding by millstone.

This procedure was used to produce high-quality mustard in the heart of Einbeck’s historic Old Town for the first time in 1923: In the mustard manufacturing plant of the family of Henry Dähnhardt. Production was stopped in the 1950s.

The Mustard Mill Einbeck run by Rainer Koch and his team has continued the mustard production tradition since 2010. Since then, more than 10 types of mustard have been created – from fruity-mild to extremely hot!

The traditional procedure of grinding by millstone processes mustard seeds together with wine vinegar, water, salt and spices in organic quality to a mustard mash. After a longer swelling process, it is grinded by heavy granite stones in a cold grinding procedure. This procedure helps to keep all contents and flavours and makes it possible to produce the mustard without any additives. Prior to filling the mustard into glasses and stoneware jars, it has to rest in barrels for several weeks to allow the flavours to develop completely.

Directions & Parking facilities

Mustard Mill Einbeck is located in Einbeck’s city centre between the squares Möncheplatz and Hallenplan in a narrow street called Knochenhauerstraße.

By car:
There are parking opportunities in proximity to the Mustard Mill - in the parking lots on Möncheplatz, on Neustädter Kirchplatz or in the street Benser Straße. Furhtermore, cars may be parked in the parking garage of the savings bank (Sparkasse) opposite the Mustard Mill.

By public transport:
Visitors travelling by public transport will arrive at Einbeck central train station. It takes approximately 8 minutes on foot (650 metres) to get to the Einbeck’s Mustard Mill. From the station, take the street Dr.-Friedrich-Uhde-Straße to the parking lot on Möncheplatz. Cross the square and you will find Blue Dye Printing Einbeck on the left-hand side. Turn into the street Hören and then turn left into the street Breiter Stein and take the first street to the right - Knochenhauerstraße. The Mustard Mill Einbeck is situated on the left-hand side of the street.

On foot:
From Market Square you will get to the Mustard Mill in approximately 2 – 3 minutes on foot (approx. 200 metres). Pass the Old Town Hall on the left, cross the square Hallenplan and, in front of the toy store Polenz, turn left into the street Knochenhauerstraße. The Mustard Mill Einbeck is located after 50 metres on the right-hand side.
