The collegiate church of St. Alexandri, also known as the Minster Church, was built between 1275 and 1508 as a three-aisled hall church on a much smaller, Romanesque predecessor building. The collegiate monastery in honor of St. Alexander was founded in the 11th century by Count Dietrich II von Katlenburg. The monastery and the associated buildings had their own administration and jurisdiction in an area known as "Stiftsfreiheit".
Special sights inside the church are as follows:

- the Chapel of the Holy Blood or Baptistery with reliquary and Gothic baptismal font (1427)
- the choir stalls (1288)
- the wheel chandelier (1420)
- the various tombstones and epitaphs of Einbeck's patrician families
- the St. Thomas Chapel with the altar of the Virgin Mary
- the wooden statue of St. Alexander
- the crypt with modern stained glass
- the special, almost fully sculpted keystones and console stones
